Savoury Muffin


1 cup of wholemeal self-raising flour
1 cup of self-raising flour
¾ cup of buttermilk
1 cup of cheese, grated
2 eggs, beaten
¼ cup of extra virgin olive oil
Pinch of salt
2 medium zucchinis (approx. 250g), grated
150g of chopped ham
Makes 12


Preheat oven to 180 degrees Celsius
Grease or line a muffin tray
Sift and mix flour together in a large bowl
Blend buttermilk. Cheese, eggs, oil and salt together
Mix in zucchinis and ham (don’t blend)
Place into 12 muffin holes or liners
Bake for approximately 15 minutes, or until golden and cooked through
Cool slightly before cooling on a wire rack completely
Serve with some homemade pesto or extra flavour 

Note: can be store in the fridge or freezer if not consuming that day
