Chocolate Snackers Bars


½ cup salted peanuts
1 cup natural almonds
1 cup roasted cashews
12 medjool dates, pitted
3 tbsp cacao
1 tsp vanilla extract
1 tbsp linseed flour
1 tbsp chia seeds
1 tbsp honey or maple syrup
Pinch of salt
Makes around 15 bars


Grind all nuts down in your food processor first, then add remaining ingredients and blend to your desired consistency, don’t over mix though otherwise they become too mushy. If the mixture is too dry to roll add a little filtered water, or if it’s too wet add extra dry fibre like almond meal or LSA. Spread on baking paper in a large square or rectangular tin so about 1 cm thick. Put a shallow line marking out little bars however large you want them.

Allow the bars to set in the fridge for 30 minutes before you finish cutting them to serve for a healthy high fibre snack.
