Banana & Blueberry Bread


1 cup wholemeal flour
½ cup almond meal
½ cup coconut sugar
1 tablespoon cinnamon
2 ripe bananas
2 eggs
1 teaspoon baking powder
¾ cup organic frozen blueberries
1 teaspoon vanilla essence


Preheat oven to 180 degrees and line a loaf tin with baking paper.

Mix dry ingredients in a large bowl – flour, almond meal, stevia, cinnamon and baking powder.

In a separate bowl, whisk eggs and vanilla essence.

Add egg mixture to the dry ingredients.

Mash bananas and fold into the mixture.

Finally fold through the blueberries. Try not to stir too vigorously once the berries are added or the mixture will turn purple.

Pour the mixture into the prepared tin and bake in the oven for about 25-30 minutes.

Allow to cool before slicing.

The banana and blueberry bread is best serve with a drizzle of honey OR some low fat ricotta cheese.
