Zucchini Loaf


Melted butter, to grease
1 1/2 cups self-raising flour
1 cup wholemeal self-raising flour
1/2 teaspoon bicarbonate of soda
1/2 teaspoon ground cinnamon
250ml (1 cup) extra virgin olive oil
3 eggs, lightly whisked
375g coarsely grated green zucchini
1 cup walnut halves, coarsely chopped
1 cup pitted medjool dates, coarsely chopped


Preheat oven to 180°C. Brush a loaf baking pan with melted butter or olive oil to lightly grease

Sift flours, bicarb soda, cinnamon into a large bowl.

Blend together oil and egg and add to flour mix.

Add the zucchini, walnuts, dates, and stir until well combined. Pour into the prepared loaf pan

Cook in oven for 1 ¼ hours

Sit to cool on wire rack before slicing up and serving

Note: Grind walnuts and dates more if you want an even texture.
